Great for packed lunches. Try stirring in some chopped nuts or mixed seeds too.
Try using a combination of tomatoes such as beef, cherry and yellow cherry tomatoes for extra colour. Great with shredded roasted chicken or cooked tiger prawns for a non-vegetarian version.
Shop bought pickled cabbage can be used as a cheat to save time. Also lovely with hot smoked salmon or mackerel instead of the poached salmon.
