Trio of Fish Pie


  • 500g Charlotte potatoes, thinly sliced
  • 25g unsalted butter
  • 25g plain flour
  • 300ml semi skimmed milk
  • 75g light soft cheese
  • 1 tsp LoSalt
  • 1 tsp wholegrain mustard
  • 25g pack chives, chopped
  • 500g diced mixed cod, salmon, cooked prawns


  1. Preheat the oven to 200oC, gas mark 6.
  2. Cook the potatoes in boiling water for 5 minutes, drain.
  3. Meanwhile, melt the butter in a medium saucepan and add the flour, cook for 30 seconds. Gradually whisk in the milk and bring to the boil, stirring until thickened. Add soft cheese, LoSalt, mustard and chives.
  4. Stir the fish into the sauce and cook for 2-3 minutes, transfer to an ovenproof serving dish. Top with the potatoes and season with black pepper. Bake for 20 minutes until golden.
