Caponata is a Sicilian dish using aubergines and celery. Here we've made it into a thick soup, or stew. It is jam packed with flavour and goodness and will keep in the fridge for up to 3 days.
This is a perfect, quick and healthy dish to make using up leftovers. We used salmon, but you could use chicken or beef, or keep it vegetarian with extra veggies!
Try using leftover roast chicken or some cooked tiger prawns instead of turkey
